Brown Rice Pudding

1 cup water
½ cup uncooked brown rice
½ cup milk
6 ounces evaporated milk
2 tablespoon sugar
¼ teaspoon cinnamon
Pinch nutmeg
½ teaspoon vanilla extract
½ cup raisins

  1. Bring water and brown rice to boil, simmer, covered 35 minutes. Rest 10 minutes. Fluff with fork.
  2. Stir in milk, evaporated milk, sugar, cinnamon, nutmeg.
    Simmer uncovered, stirring often, 40-50 minutes.
  3. Remove from heat. Add vanilla and raisins.
