Cornmeal Pancakes


1 1/4 cup cornmeal, yellow
1 1/4 cup buttermilk
2 tablespoons butter, melted 

Microwave 60-90 seconds on high, stir halfway through. Cook until edges start to set.

Then Add
3/4 cup flour
2 tablespoons sugar
1 3/4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs, lightly beaten
1/2 cup buttermilk (in addition to the milk already added)

Let rest 10 minutes
Spray griddle (350°) with oil and spoon on about 3 tablespoons of the batter and cook about 2-3 minutes until golden, flip and cook the other side until golden.
