Pork Loin Medallions with Peanut Crust

Sliced pork loin 1/2″ thick
Flatten it a little with a meat mallet to about a third of an inch thick.
Coat with crushed unsalted peanuts (a blender works well). Firmly press crushed peanuts into meat.
Cook 2 minutes on one side and one minute on the other.
Let rest for ten minutes and serve with fried rice and a vegetable.
